Savory Oats Porridge

Savory seasoned chicken in soft and creamy oats porridge garnished with spring onions.

Ingredients

  • 1 cup/90 g Quaker Quick Cook Oats
  • 100g of Chicken fillet, sliced thinly
  • ½ tsp. sesame oil, optional
  • 1 tsp. light soy sauce
  • Pinch of white pepper
  • ½ cup (100 g) rice, washed and soaked for 30 minutes
  • 1 litre of water
  • 1 tablespoon cooking oil
  • Ginger, finely shredded
  • 2 dry mushrooms, soaked, washed & sliced
  • 1 small carrot, diced

Garnishing

  • Spring Onions
  • Fried Onions
  • Chilies, sliced thinly

Directions:

  • Season chicken with sesame oil, soy sauce and pepper. Set aside.
  • Heat oil in saucepan. Add ginger, mushrooms and chicken. Cook, stirring, for 2 – 3 minutes. Add rice, water, oats & carrots.
  • Cook about 30 minutes until porridge is soft and creamy. If too thick and dry, adjust consistency with additional hot water. Season to taste with salt and pepper.
  • Serve in individual bowls with a dash of sesame oil & soy sauce. Garnish with spring onions, fried shallots & chilies.
