Oat Century Egg Porridge

The use of Quaker Oats in this hugely popular Chinese dish provides one of the healthiest start to the day.

Ingredients

  • ½ cup (50 g) Quaker Oats Instant Oatmeal
  • 3 century eggs, shelled and diced
  • 250 g chicken meat
  • ½ cup (100 g) rice
  • 10-12 cups water
  • 10 cm ginger, finely shredded
  • ½ tsp. salt
  • 2 stalks spring onions, chopped
  • ½ tsp. white pepper
  • 2 pcs dried mushrooms (soaked & sliced thinly)
  • 50 g carrot (diced)
  • 1 tsp. soy sauce
  • 1 tsp. sesame oil

Directions:

  • Boil rice, carrot & oats in 10 cups water until it turns to porridge.
  • Marinate chicken with salt, dash of pepper and sprinkling of sesame oil. Steam until cooked and when cool, shred the meat finely.
  • Diced century eggs into small pieces.
  • Add shredded chicken, mushrooms and century eggs into porridge. Stir in soy sauce to taste.
  • To serve, scoop porridge into individual bowls. Garnish with shredded ginger, spring onions and dash of white pepper.
