Vegetarian Mutton Curry Rice

Ingredients

  • ¾ cup (180g) white or brown rice.
  • 9 tbsp (90g) Quaker Oats For Rice.
  • 1¾ cups (400ml) water for cooking rice in a rice cooker.
  • 2 tbsp. unsaturated cooking oil.
  • 1 large brown onion, chopped coarsely.
  • 2 cloves garlic, chopped finely.
  • 4 tbsp meat curry powder.
  • 2 tsp ground coriander, roasted.
  • 500g vegetarian mutton.
  • 3 tomatoes, diced.
  • 1¼ cups (300m1) water.
  • 1 snake gourd, peeled and cut into wedges.
  • 1 large carrot, diced.
  • ¼ cup skim milk mixed with ½ tsp corn flour.
  • ¼ cup thick coconut milk.
  • ½ tsp salt.
  • Pepper to taste.
  • 1 sprig of coriander leaves, chopped finely for garnishing.

Directions:

  • Mix white or brown rice with Quaker Oats For Rice and 1¾ cups water and cook the rice in a rice cooker.
  • Heat oil in a non-stick pan and sauté onions and curry leaves until fragrant.
  • Add curry powder and roasted ground coriander, and fry for about one minute over medium heat.
  • Add vegetarian mutton and tomatoes. Stir-fry for about 2 minutes.
  • Add water, snake gourd and carrots. Cover and cook over a simmering flame.
  • Once the vegetables are tender, pour in skim milk mixed with corn flour and coconut milk. Season with salt and pepper to taste. Stir well and when he curry is heated through, turn off the flame.
  • Mix white or brown rice with Quaker Oats For Rice and 1¾ cups water and cook the rice in a rice cooker. After about 10 minutes, add the chicken mixture into the rice cooker. Do not stir until the rice is cooked. When the rice is cooked, mix lightly, dish out and serve.
  • Garnish the curry with coriander leaves and serve with oat rice.
