Chicken Biryani Fried Rice
Serves: 4 - 5
Preparation Time: 25 minutes
Cooking Time: 30 minutes

Ingredients

  • ¾ cup (180g) white or brown rice.
  • 9 tbsp (90g) Quaker Oats For Rice.
  • 1¾ cups (400ml) water for cooking rice in a rice cooker.
  • 50ml evaporated milk.
  • 4 pcs lean chicken breast (400g), diced.
  • ½ tsp salt.
  • 1 tsp ground ginger.
  • 1 large onion, chopped finely.
  • 1 star anise.
  • 2 tbsp (30g) raisins.
  • 2 packets (17g) biryani fried rice mix.
  • 4 eggs, lightly beaten.
  • 30g cashew nuts, roasted.
  • 1 sprig coriander leaves, chopped finely.
  • 1½ tbsp unsaturated cooking oil.

For Cucumber Yogurt / Raita - Mix all ingredients together and refrigerate

  • 1¼ cups low or non-fat yogurt.
  • 1 small cucumber, diced.
  • 1 onion, diced.
  • 1 tsp mustard seeds, roasted.
  • 1½ tbsp salt.

Directions:

  • Mix white or brown rice with Quaker Oats For Rice and 1¾ cups water and cook the rice in a rice cooker. When the rice is cooked, dish out the rice.
  • Gently fluff up cooked rice and leave it to cool.
  • Marinate chicken with salt and ginger and set aside.
  • Heat half the oil in a non-stick pan, stir-fry the onion and star anise until fragrant.
  • Add marinated chicken and stir-fry until chicken is cooked. Dish out on a side plate.
  • Heat the remaining oil in a non-stick pan, add in eggs and fry until cooked. Add cooked rice, raisins, evaporated milk, biryani fried rice mix, and chicken mixture. Stir- fry rice for 3-4 minutes over high heat.
  • Just before serving, sprinkle toasted cashew nuts and chopped coriander leaves on the rice.
  • Serve rice with cucumber yogurt.
