Indian Chicken and Cauliflower Rice

Ingredients

  • ¾ cup (180g) white or brown rice.
  • 9 tbsp (90g) Quaker Oats For Rice.
  • 1¾ cups (400ml) water for cooking rice in a rice cooker.
  • 350g lean chicken fillet, diced.
  • 3cm ginger, shredded.
  • 1 onion, chopped finely.
  • 350g cauliflower, cut into small florets
  • 1 medium carrot, diced.
  • 1 tsp turmeric powder.
  • 32 tbsp chicken stock powder.
  • ¾ tsp salt.
  • ½ tsp black pepper.
  • ¾ cup cashew nuts, roasted.
  • ¾ coriander, chopped finely.
  • 1½ tbsp unsaturated cooking oil.

Directions:

  • Marinate chicken fillet with ½ tsp salt and pepper for 10 minutes..
  • Heat 1 tbsp oil in a non-stick pan, stir-fry chicken for about 2 minutes and dish out on a side plate.
  • Using the same pan, add in ½ tbsp oil, sauté ginger for a minute, add in onions, carrots, cauliflower and cook for about 2 minutes. Turn off the heat.
  • Put washed rice, Quaker Oats For Rice water, turmeric powder, chicken stock powder, ¼ tsp salt into a rice cooker and cook. After 10 minutes, add in the chicken and cauliflower mixture. Do not stir the rice - just continue to cook the rice until it is soft.
  • Gently fluff up rice with a fork and dish out the rice.Serve garnished with cashew nuts and chopped coriander.
